Made these with a butter knife for the "drag". Sauce is a Sunday Sugo with pork shoulder.

Recipe was the basic flour only pasta. Semolina, water and a touch of salt. Rolled into pencil like thickness and cut rope to size. Using a butter knife Drag it across the tube and it will curl making the “cave’ as in Cavatelli. The sauce is just the basic sunday sauce everyone knows and has Basil, Garlic, Onions,, and chunks of pork butt simmered for about 3 hours. I do have one super secret ingredient. It is a hack for a melted anchovies substitute. Add about a Tbs or even 2 of Red Boat fish sauce.
