Definitely room for improvement on technique but the batter was very light and crispy, not bad for a first attempt.

Does anyone know how to make the shrimp stay straight after frying? I already made small cuts along the top and bottom of the shrimp and straightened it out and it looked fine raw but it shriveled up when frying.

    Not bad for a first: with the shrimps you don’t just need to make incisions, you need to break the structure using your fingers, basically by pressing it down from both sides. You’ll feel when the flesh gets broken. After this the shrimp will be limp but double the size in length. Also I’d remove the telson, as the water inside might explode in the fat. For more even cooking remove the mushroom stem.

    That’s a really good first try! Probably better than all my attempts but I don’t vibe with deep frying for some reason
