Followed the amazing ribs recipe for the first try. Will cut down on the brown sugar next time but still good! Toughest part is getting the skin off. Now about to make some poppers! Happy new year!

Bacon has become one of my regular cooks on my pellet grill. I’ve done it maybe 4-5 times so far and experimenting each time. I’m smoking another 5lbs tomorrow. I would say what I’ve learned is using a foil pan filled with ice on the lower rack with the pork slab right above along with a smoke tube filled with pellets mixed with wood chips has been my best batches. The ice tray keeps it from getting to temp too fast allowing more smoke flavor. Slicing is a whole different struggle…
