🔥 Today I’m recreating the viral Kebab House Style Doner Kebab at home — using the perfect fat ratio, authentic seasoning, and an easy oven method that gives you that REAL takeaway texture and flavour.

📌 Ingredients (Doner Kebab)
700g Lamb mince (70/30 Ratio Meat to fat)
1 Grated onion
1.5 tsp Salt
1 tsp Garlic granules or powder
1 tsp Parsley powder
1 tsp Ground white pepper
2 tsp Smoked Paprika
2 tsp Ground cumin powder
4 tbsp Greek yogurt
4 tbsp Olive oil

White sauce
1 Gherkin
1 Clove garlic
Juice of 1/2 lemon
1/2 tsp salt
1/2 tsp Dried dill
4 tbsp Greek yogurt
2 tbsp Mayonnaise

Chilli sauce
3 tbsp olive oil
4 clove Garlic
1 Red onion
1 Tomato
1/2 Scotch bonnet or habanero chilli
1/2 tsp Salt
1 tbsp White vinegar

Salad
Lettuce | White cabbage | Red onion | Tomato

  1. Latif – respect bro, this came out so well, better than any takeaway!

    I used a whole breast of lamb, boned out, as it has the perfect meat-to-fat ratio, with no adding anything!

    I also added a teaspoon of ground cinnamon, which gives a really lovely little warmth of flavour – well worth thinking about.

    Was so impressed with the result, it'll be a favourite from now on – great work mate.

  2. This looks fantastic, can’t wait to try this! However proper kebab shop chilli sauce is never cooked, it’s always raw. Onion, garlic, chilis, a tomato, and importantly a carrot, add a little splash of water and blend until smooth. Done.

  3. Things have reached a breaking point when a small doner kebab, small chips and a can of coke now costs £17 per person. We'll start doing this in the air fryer because we can't justify spending £85 per week on a single takeaway mean.

  4. I was initially irritated this post wasn’t prepared by a Turkish chef. But after watching, and seeing you’re using lamb with extra fat, I have designated you an honorary Turk. However, there should be more garlic in the ‘toum’ and it should be crushed with salt, no gherkin, none, ever!!!!

  6. I particularly like the simple cooking method it gives a very good result and you can cook a single kebab but save any excess mix ready prepared in the freezer for later use.
    The majority of recipes are baked in loaf tins which gives a very different texture or require you to make a much larger quantity and own a rotisserie grill (which admittedly I do own but rarely need that much doner meat).

  7. Looks great and I bet it tastes wonderful! I'd imagine its actually better than at least 90% of places selling doners, because they won't be using 100% lamb. The factories that make the big doner skewers will be mixing in as much cheap meat, likely chicken, as they can get away with. By adding the fat, what you may be doing is compensating for whatever fatty chicken (my guess would be the same mechanically stripped meat that's in McNuggets) is in a typical doner. If you can nail the same texture/mouthfeel with 100% lamb, your kebab will taste better than a takeaway.

  9. I miss a doner kebab, they don’t have them here in Canada or rather not like back in the UK, am so doing this tomorrow but with beef mince (husband hates lamb 😢).   10. You still can't beat doner kebab's from the 90's. Pure lamb, cut the proper way with blades and compared to today's mixed lamb and beef and god knows what else. My advice would be make it at home or find a specialist kebab house that make their own doner, and avoid the mass-produced paste at all cost.

  15. I made this today – 1/1/26 – it’s absolutely delicious n so simple to make it. I have shared the recipe with friends n family n they will be trying it too.
    Have tried other recipes but they have been a big let down.
