Hello everyone! Today we’re preparing Seafood Risotto π¦π¦
Serves 2
Ingredients for the fish stock:
1 carrot
1/2 celery stalk
1/2 onion
2 cherry tomatoes
1 potato
The heads of the scampi
Extra virgin olive oil
Salt to taste
Ingredients for the risotto:
400 g prawns (mazzancolle)
200 g squid
200 g cuttlefish
200 g scampi
200 g Carnaroli rice
1 teaspoon tomato paste
1/2 glass white wine
1 knob of butter
Fresh parsley, finely chopped
Salt to taste
Chili pepper (optional)
Extra virgin olive oil
1 clove of garlic, unpeeled (in its skin)
Method
Prepare the fish stock
In a pot with water, add a drizzle of olive oil, the potato, carrot, celery, onion, cherry tomatoes cut in half, salt, and the scampi heads. Bring to a boil and cook for about 1 hour. Keep the stock hot.
Prepare the seafood
In a pan, add a drizzle of olive oil and the unpeeled garlic clove, and let it sautΓ© gently.
Add the cuttlefish and squid, sliced into rings, and sautΓ© for about 4β5 minutes. If you like, add some chili pepper.
Add the prawns and scampi and cook for another 3β4 minutes.
Pour in half of the white wine and let the alcohol evaporate.
Remove the garlic and set the seafood aside when cooked.
Toast the rice
In a non-stick pan, add the rice and toast it for a few minutes, either dry or with a drizzle of olive oil if you prefer.
Add the remaining half of the white wine and let it evaporate.
Cook the risotto
Start adding the hot fish stock, a little at a time, filtering it with a sieve.
Add the tomato paste and mix well.
Continue cooking the risotto, adding stock as needed and adjusting with salt.
Add the seafood
About one minute before the rice is fully cooked, add the seafood mixture and gently stir to combine all the flavors.
Cream the risotto
With the heat off, add a knob of butter and cream the risotto until it becomes nice and creamy.
Finish with chopped fresh parsley and give it a final stir.
Serve your seafood risotto immediately, hot, creamy, and full of sea flavor πβ¨
