Stir fry veggie mix, onions,, tossed in extra virgin olive oil, salt, pepper, garlic.
Extra firm tofu, cut in half, tossed with sane, roasted with veggies. (Note: I used the freezer method. I know it's not really necessary with extra firm, but I was doing thicker pieces so wanted a much liquid as possible out.)
All the above served on a roasted sweet potato and drizzle of low sodium soy)
Filling snd tasty. but not heavy.
