I got the flavor down to my preference. But the texture is off. Any pointers? I used 2 cups of rice. Washed the rice. Toasted the rice over medium ish heat. Took a long time to brown. Maybe the heat was too low. I did 5 cups of liquid (water, tomatoes, onion, garlic, cumin and salt) in a Dutch oven.
Simmered for about 20 min and let it rest an additional 5 min.
