👉 Ingredients (3 salads):
• 6 tbsp Greek vinaigrette
• ¾ cup diced cucumber
• ¾ cup cherry tomatoes, halved
• ¾ cup black beans, rinsed
• ¾ cup diced red onion
• ¾ cup Kalamata olives (optional)
• ¾ cup feta cheese
• 3–4½ cups fresh spinach

    Makes 3 quart-size mason jars

    🛒 Ingredients for 3 Mason Jar Salads

    Dressing (bottom layer)
    • 6 tbsp Greek vinaigrette
    (2 tbsp per jar)

    Vegetables & Beans (middle layers)
    • ¾ cup diced cucumber
    • ¾ cup cherry tomatoes, halved
    • ¾ cup black beans, rinsed & drained
    • ¾ cup diced red onion
    • ¾ cup Kalamata olives, sliced (optional)

    Cheese
    • ¾ cup feta cheese crumbles

    Greens (top layer)
    • 3 to 4½ cups fresh spinach, loosely packed
    (1–1½ cups per jar depending on how full you want them)

    🧅 Assembly Instructions (3 Jars)
    1. Add dressing to each jar:
    Place 2 tbsp Greek vinaigrette into the bottom of each mason jar.
    2. Add firm vegetables in this order:
    Divide evenly across 3 jars:
    • Diced cucumber
    • Cherry tomatoes
    • Black beans
    • Red onion
    3. Add olives and feta:
    Divide the olives and feta evenly into the jars.
    4. Add the spinach:
    Loosely pack 1–1½ cups spinach into each jar, filling to the top.
    5. Seal and store:
    Tighten lids and refrigerate.
    These salads stay fresh for 3–4 days.

    🍽️ To Eat

    Shake or pour into a bowl and toss thoroughly so the dressing coats everything.
