Highly recommend avocado oil, I always hear vegetable or just oil, but never what kind, avocado oil has a higher smoke point, so it transfers the heat from the pan to the meat mire effectively, rather than evaporating, so you get a nice crust without sending smoke signals to your apache Indian chief, while also not burning the steak.
love your stuff, love the videos, watch a lot of cooking youtubers. how come there is not one good video on how to cook a 3/4 inch steak, like walmart sells, at already way too high of a price. you know like 98% of the people watching these videos can afford? make it make sense.
Why this video annoys me is he doesnt not clearly explain when he salts the steak for the 2in plus. Any idiot off the street can cook it with no seasoning or timing. Be better noob

Iirc you don’t gotta rest with a reverse seat, but maybe that’s after setting the crust.

If the resting steak isn't hot enough to melt butter it's probably not cooked enough internally

I don’t usually see chefs put pepper on a steak before searing as pepper tends to burn in hot pans.
