Yes I do and after buying pork from a local Amish processor/market, will never buy from anywhere else.

I do and go through the entire selection before i pick a package, just like with a rib eye.

Saw some pork at nugget the other day and immediately thought was, is this A5 pork? 😂

Blanch the skin first, but only skin. Pat dry, cool a bit, and score with a knife. Start in a cold pan skin side down, then sear the meat sides basting the skin with rendered fat.

So we have Porco Preto and Porco Iberico, on a more industrial production.
