My question is that you’re choosing to still do mustard with a squiggle but the ketchup must be orbs. Surely you would want the mustard to also be orbs so that you can both balance the ratio and keep both of them separate enough to taste separately.

I watched a YouTube channel review Heinz limited run of Ketchup caviar a while back and they said it was actually fantastic for an occasional burst of tang and sweetness. Definitely has it’s place but absolutely a gimmick, and wouldn’t bother making it.

I think it’s a fun idea. But, texturally speaking, I am weirded out. Is it mush? Is it like jello consistency? Is there a film? I would rather the ketchup be encapsulated and return to it’s normal consistency once bitten. The idea of chewy or mash-y ketchup flavored pearls just…no.
