One-pan roast (and giant Yorkshire)

Fancied a roast; didn’t fancy the effort. Threw a load of root vegetables into a roaster with chicken thighs and pigs in blankets and plenty of honey and mustard and oil. Made a giant Yorkshire pud, too. I wish I’d gone to the effort of making a gravy—the pan juices were good enough, but only just.
