

So I did smoked pulled ham. It was great. You hit w some bbq rub, smoke 2 hours, then throw in a pan w some apple juice, butter, and whatever else you want and cover it with foil and you basically get pulled pork but it's double smoked ham. I served it as dinner roll sliders and had jalapenos and purple onion marinated in vinegar for the adventurous. It was a hit.
We did this for our late Christmas #2 party last night for my oldest daughter who was out of town w my SIL on Christmas Day. My daughter is pregnant and requested the ham. So we're having low key new years day get together tomorrow. We have a ton of left over ham and my daughter wants the ham again. Does anyone have any ideas for a good sandwich option that is somewhat different from the last one? I was thinking maybe on cuban bread with mayo, mustard, dill pickles, and Swiss cheese in a sort of non traditional style Cuban. I'm not sure how the sweeter pork flavor profile would go with the Cuban fixings but i think it could work.
Any better ideas? Anything you'd change?

You can use the canned dough, like for croissants the Pillsbury kind, and wrap it around some pulled pork with a lil bbq sauce and some cheese. Bake it and enjoy.

I’d try a five spice seasoning (for a super simple, hacked version try Bachan’s mixed with five spice powder) and serve it banh mi style

Make a hash with a fried egg on top. Denver omelette. ham and bean soup. Ham and split pea soup. Ham salad for crackers. Big pot of greens. Scalloped potatoes with ham. SOS of sorts. A hot brown with ham instead of turkey. Ham and corned pudding. Quiche. Corbonara with ham (criiiiispy).
