Ingredients:
1 lb fresh calamari
1 cup semolina flour
1 cup 00 flour
Salt, to taste
1 lemon, cut into wedges
Sunflower oil, for frying
Instructions:
1. Rinse and clean the calamari, cutting the bodies into rings.
2. Toss with the mix of semolina and 00 flour, shaking off excess.
3. Fry in hot sunflower oil for 2–3 minutes, until lightly golden and crisp.
4. Season immediately with sea salt and serve hot with lemon wedges.

As a fellow chef, 2-3 minutes is way too long for rings. Those things are gonna be like chewing on rubber. Properly cooked calamari should be extremely tender. I find at a standard 350f, rings like that would cook in about 1 minute 15 seconds. And that's being liberal with the timing.
Have to ask the question… what are you frying it in? Olive oil, avocado oil or a healthy lard base?
