Need to revisit/tweak this but it was good out of the gate. 3 oz Bluecoat fat-washed with Jose Gourmet Smoked Sardines oil, 1 oz Wine Collective Vemnú, few drops saline solution, lemon twist.

Would probably up the saline and bolster the citrus a bit too with lemon bitters.
