Cooked tritip?

    It’s cooked fine. The problem is that it wasn’t left to rest so all the juice ran out. Also if you let it rest it would have cooked just a little bit more and probably have been perfect.

    When it is not rested long enough and you cut the whole thing you lose a lot of flavor that is sitting on the board.

    Yesterday someone low and slows one like brisket and now this. Why can’t this sub cook tri tip? Just reverse sear like a steak to medium rare.

    Tritrip generally seems to be pretty “juicy” even with a proper rest, doesn’t it? I think this is well beyond that, but maybe not quite as crazy as it seems?

    Id eat it. Id complain about it while I ate it, but I’d eat it all.

    It’s a shade under for a classic Santa Maria-style bbq, but definitely better than being over! I find tritip has a remarkably narrow window between perfect and over, but is much more forgiving on the rare side.
