These look amazing! I’ve been meaning to try making pretzels for ages but keep chickening out because the whole lye bath thing intimidates me. Did you use lye or baking soda?
I made the mistake once of trying soft pretzels from a recipe that skipped the alkaline bath entirely and they just tasted like… bread twists? Fine but not that distinct pretzel flavor and chew
