### **Written Recipe:**
1. **Prepare the Doner Mixture:** Place the ground meat in a mixing bowl. Add grated onion, breadcrumbs, yogurt, mineral water, baking powder, and all spices (salt, red pepper, chili flakes, black pepper, cumin).
2. **Kneading:** Knead all ingredients thoroughly for at least 5-6 minutes.
3. **Shaping:** Divide the prepared mixture into 4 equal parts by eye.
4. **Rolling Out:** Place a piece of parchment paper on the counter. Take one portion of the mixture, place it in the center, and press lightly with your hand. Cover with another piece of parchment paper. Using a rolling pin, roll it out as thinly as possible.
5. **Rolling Up:** Carefully remove the top parchment paper. Starting from the narrow edge of the parchment paper, roll it up loosely into a log. Prepare the other portions in the same way.
6. **Prepare Vegetables:** Slice the green peppers and tomato.
7. **Baking:** Place the doner rolls spaced apart on a baking tray. Place the tomato and pepper slices in the remaining gaps. Brush the vegetables with a little oil. Bake in a preheated 200°C oven without convection for about 30 minutes.
8. **Prepare the Pita:** Cut the thin pita bread into small cubes. Melt butter in a pan. Add the chopped pita bread and toast for 3-4 minutes over medium heat, stirring constantly. Remove from heat.
9. **Prepare the Sauce:** In a saucepan, sauté the vegetable oil, tomato paste, and butter. Stir for 1-2 minutes until the paste is fragrant. Slowly add 1 cup of water while stirring. Add the remaining 1 cup of water. Add red pepper, black pepper, salt, and sugar and stir. Cook on low heat for another 2-3 minutes and remove from heat.
10. **Prepare for Serving:** Remove the cooked doner from the oven and separate from the parchment paper. Break or cut into appropriately sized pieces.
11. **Presentation:** Spread some of the toasted pita bread on a serving plate. Drizzle some of the prepared sauce over it. Arrange the broken doner pieces on top of the pita. Drizzle a little more sauce over the doner. Place yogurt on the side of the plate. Garnish with the baked tomatoes and peppers. Finally, generously pour sizzling melted butter over everything and serve hot.

### **Key Points (Püf Noktaları):**
* **Meat Choice:** A beef-lamb mix gives a more traditional and flavorful result.
* **Kneading Time:** Kneading the mixture well is crucial for the doner to hold together and achieve the right consistency.
* **Thin Rolling:** Rolling the doner mixture as thinly as possible creates the effect of thinly sliced doner meat like in restaurants.
* **Loose Rolling:** Be careful not to roll the log too tightly, otherwise the inside might not cook through or could become tough.
* **Oven Control:** Oven temperatures can vary. Make sure the doner is nicely browned and cooked through.
* **Sauce Consistency:** If the sauce becomes too thick, you can thin it by adding a bit more hot water.
* **Butter:** Pouring sizzling butter before serving is a must for Iskender; don’t skip it.
