
My kids like Bullseye sandwiches for breakfast (toad in the hole, or Alabama Eggs). I got out two slices of bread and buttered them, but one is staying home with a sore throat so didn’t want the grilled bread.
I decided it shouldn’t go to waste, and since I didn’t have corn tortillas fried up, the dish couldn’t be called Huevos Rancheros. I live in the city, so they’re now Huevos de Cuidades.
The sourdough is home made, as are the refried beans and the the salsas. The eggs came from a neighbor’s chickens.
I might have to make this again. It was delicious.
