Went to an expensive restaurant for NYE with my wife. I ordered the 12oz ribeye and this is what they gave me.

The waiter, manager, and chef all insisted this is a ribeye. The chef further stated that how they do ribeye is that they remove the rib cap and fat and just serve the eye.

I did not mention that I am a professional meat buyer but I did say that it’s fine if they don’t have ribeye, I just don’t like being gaslit. They continued to insist this is ribeye.

So good people of Reddit, is this ribeye??

    That’s more than 12oz and it looks like Beef tenderloin filets. That’s definitely not ribeye.

    It’s exactly what they say it is. You honestly believe that they “couldn’t get ribeye” on NYE so they decided to lie to you?

    I love trimming ribeye this way. But they should have served it with the spinalis as a separate piece tied off and cooked to medium.

    No way that is ribeye. And why put ribeye on the menu and take off the best part and the fat? That’s the reason i prefer ribeye over filet. If it’s true what they say they are complete morons, and if they are lying they are morons too.

    even if it was the eye of the loin and they removed the fat cap I’d be very annoyed if that’s how they did it. That’s a great part and what I expect to enjoy when I get rib eye.

    100% they used a standing rib roast and removed the bones and fat cap. That’s how Meathead recommends it and how I cooked mine on Christmas. You get a more even cook on the best part and get 2 extra meals out of it: 1) grilled rib meat and, 2) roll up the fat cap, slice it into pinwheels, and cook it over charcoal.

    I will defer to more trained eyes on what it is but i can say it doesn’t look like ribeye to me and they needed to dress it up with a demiglace sauce… Good ribeye should need nothing but salt and pepper and its own juices coming out of the steak.

    That is the stupidest way to serve ribeye I have ever heard of. The best part of the ribeye, is the cap. In the best case scenario that they are 100% truthful about that, it’s still a massive L.

    I find it humorous that Costco sells prime ribeyes for $23 but the cap by itself is 26 and the eye by outsold is also 26. Eye being cheaper than a full ribeye is ridiculous. I guess some people prefer their prime with less fat.

    Eye of the ribeye, still technically a ribeye without the best parts, should’ve been labeled that way, same reason why you see spinalis cap or ribeye cap on menus, and not just “ribeye”

    Weird. It could be. The middle of the ribeye usually isn’t that round – it’s usually more rectangular than this.

    It looks like a tenderloin or baseball sirloin.

    I feel like a steakhouse would just serve up a new steak instead of doubling down on a lie.

  23. I would not order a ribeye from anywhere that intentionally removed the cap and fat. That is literally the *point of eating a ribeye*.

    Maybe they remove the cap to sell it separately. If that’s the case, they shouldn’t sell this leftover cut as a ribeye. I’d be upset as well.
