CLEVELAND, Ohio –The Palazzo on Cleveland’s west side is hosting a six-course Italian black truffle dinner at 6:30 p.m., Wednesday, Jan. 28. Tickets are $125, plus tax and gratuity. Reservations are required.
Italian black truffles, a sought-after delicacy, are harvested in the winter months, peaking in January. Stronger than white truffles, they are described as earthy and sweet, with hints of chocolate, hazelnuts and rich soil umami.
They’re hard to find in nature and thus command prices such as $50 to $100 per ounce.
Chef/owner Rafael Zaloshnja is incorporating them into every course of the special dinner.
“I lived in Verona, Italy for 14 years and black truffles were essential in my cooking journey,” said Zaloshnja. “Their intense flavor and ability to transform dishes and sauces was very exciting to me. They are earthy and pungent, yet the flavor is unique and sophisticated.”
