Disney’s take-home version of traditional French dessert
Amorette’s Patisserie in Disney Springs brings French-style treats to Central Florida
We showed you the behind the scenes look on how much Walt Disney World does for Second Harvest Food Bank, including the unused food every single night. They make sure it gets on the tables across Central Florida. Let’s bring in Chef Jocelyn right now from Amaret’s Patisserie. You guys also have some creations behind the scenes that people can take part in if they visit the parks. What are we making today? So today we’re making *** little bit of *** take home version of *** traditional croquembouche. So at Amaret’s Patisserie we have ***, *** very small Christmas tree croquembouche. In France, traditionally, croquembouche is made for the holidays, especially for weddings, so we have *** really large one on display as an example here. But at Ammarrith Patisserie we wanna make *** small one so you can take it home and have it with the family. All right, let’s, let’s walk through this because obviously we’re doing Share your Christmas in *** number of ways, and this is *** way that you can share your Christmas at home. Tell us what we got right here. So we have. Couple of ingredients to get this made today. First we have profiteroles. So profiteroles are also known as cream puffs. They’re smaller versions. Um, we get this made with *** bunch of egg flour and sugar, cook that over the pot, add some eggs to it, bake it in the oven, and it puffs up, and then we get that nice little green color from it. So then we have. Our ingredient to kind of put everything together is our soft ganache. It’s *** nice milk and dark chocolate ganache. It’s gonna be the glue that assembles everything in there to build it. Is this powdered sugar over top of it? Yes, so it’s actually part of the sugar to make it look like snow. We love *** good Christmas and we love *** good snowy tree, so we finish that off by dusting it and then we’ll actually move to the assembly part. We have in here, it’s *** hazelnut custard, also traditional flavor from France. We’ll take our little profiteroles and we’re actually just going to stuff them. So that way, ah, *** little goodness in the middle. Every bite gets *** full tasting of that custard. And that way it’s also nice to share with the family and people, if they visit the park and visit the restaurant, they’ll be able to do this as well. Yes, they’ll be able to get one, take it home, and we actually love it because as we’re assembling it, it’s also easy to take it down that way. So instead of having the struggle of sharing *** dessert, you’ve got *** family fighting over everything, everybody can just take *** little piece for themselves so. It’s lovely. I love that part. So which one is this? This is our soft ganache that we talked about *** little bit, but before we get there, I actually want to show the fun part with our powdered sugar here. So after the kids will love, this is the part the kids love. After we get everything assembled and filled, we can go ahead and dust them, so it looks just like snow on top of these guys. And then. We have some already, ready to go. We’re going to assemble them now so we can build, build our tree. Start with *** little bit of *** dollop here. And this is the part where We love it, um, when we assemble it in the team. So then we’ll take this and we’ll kind of pipe along the side here. Almost resembles that. Branch part of *** tree Christmas tree nice and dark, finish it off up top. And then Just *** little bit of *** dollop here. And of course we of course it’s our Christmas tree so everything gets *** nice little star on top. I absolutely love this. Now this is an easy thing that we kind of put together. You guys do the hard work. We get to do the fun part of this, but you also have *** secret ingredient, don’t you? I do. Yeah, I have *** little secret ingredient coming around. Chef Mickey, come on in. Chef Mickey is the game planner for making all these creations come to life. How much is it *** magical experience to be at the park and be able to put all this together? Uh, it’s just something that’s so unique. We have so many different options at Amar Patisserie, especially for Mickey. We have our little, uh, character inspired domes for you over there, yeah, we love them. Ammar’s Patisserie has around 6 different character domes that we do throughout the year and also for the holidays, inspired by Mickey himself, of course, of course. Of course, all the fun that happens over at Ammarre Patisserie, you can join in by going over to Disney Springs. Thank you guys so much for all you do in the community, whether it’s giving back to share your Christmas or Second Harvest Food Bank or teaching families at home to be able to enjoy this experience on their own, you can make this own creation all by yourself by visiting the restaurant over at Disney Springs.
