
Hiya, I've recently been into fishing and spearing (not a sushi expert). However the only I can be 100% on raw consumption is freshly caught squid. But I caught a fair bit of gar today. Should I freeze it(im afraid it might ruin the texture), salt it or just eat within 24h?

There are going to be many who say otherwise, but it is possible to eat fresh wild fish you caught yourself raw without having been frozen.
The considerations to do so safely is not just freshness however:
Firstly, your fish must be 100% saltwater fish throughout its entire lifecycle. Freshwater fish have a completely different set of parasites that are much more dangerous to human health than saltwater fish. Anadromous fish are just as dangerous as freshwater fish.
Secondly, when you cut the fish, you should look very closely for any parasites, in particular, anisakis worms. Anisakis worms are the most common saltwater fish parasite that can give you a bad time. These worms are big enough to seen with the naked eye and are very recognizable if you know what to look for. A UV light will also make them glow bluish-white which is great for fish as slim and translucent as these. If there are only a few worms, it is technically safe to just remove them before eating.
Also, specifically with oily, silvery fishes, freshness is important for taste and texture. These types of fish go bad quickly so you’ll want to store them in in ice and eat them quickly.
By the way, your fish are halfbeaks. The top beak on a garpike is much longer, almost as long as the bottom one. Though I guess with the ambiguity of common names, I’m not going to be surprised if these are called gar somewhere.
You gotta flash freeze it incase of internal parasites.

I would deep freeze it for at least a couple days so any parasites would die off.
Mate, those things have seriously loads of bones… best just gut and head , roll them flat with a bottle then shallow fry they defo would not make sushi from them. Nice catch and good to eat don’t get me wrong
Those look like ballyhoo, which I’ve always used as bait, but Google claims they’re edible but they have lots of bones.

Even if it’s technically possible I don’t think all fish can be used for sushi in terms of preparation tediousness and flavor since it’s raw
I’m jealous of your catch, I really want to make my own Roman garum and I don’t have my shit together enough to find someone to catch tiny fresh fishies for me to salt and ferment 🙂
Fresh water fish are to be avoided, as there’s a higher possibility of parasites as I understand it.
Flash freezing is supposedly the commercially approved way to make sure it’s safe? Could be wrong.
Put it in your mouth and chew.
Needle fish preparation can be simple salt wash … or hikarimono marinate
