
I've been wanting to eat more Mediterranean and tonight I made these salmon bowls for my husband and I.
-Quinoa cooked in chicken broth
-Salmon baked with za'atar, lemon juice, olive oil, salt and pepper (at 400, this took about 10 mins for the thin chunks I was working with)
-mini cucumbers, grape tomatoes, red onion, capers, tzatziki, feta, fresh dill, lemon and olive oil for toppings.
This turned out very tasty!

Delicious!! I had a Greek salad for dinner tonight too, so good.
Ohh I’ll have to make this… this is similar to the Mediterranean turkey bowls that I make…I’ll swap with the salmon next 😋😋
