Stainless steel gives the best crust

    I find cast iron, belting hot works best.

    Charcoal chimney chute gives the best crust.

    SS and cast iron do great. But. Nothing will stay me from a charcoal chute of coals

    Totally agree. I use a 5 ply stainless pan from Misen. Steel, aluminum, steel, aluminum and then steel. Was like $80 bucks on amazon, and I find it works better than cast iron. I’m able to get a great crust cooking on low-medium heat and it doesn’t get hot enough to burn the butter. More people should try multi-ply stainless steel. It works really well. Also doesn’t set off my smoke detector since I’m able to cook on a lower heat, and requires less maintenance too.

    Doesn’t your All Clad pan get burn marks on the sides from the high heat?

    Stainless steel for steak is not talked about enough. I made several steaks on stainless steel over the holidays. The crust was amazing.

    Cast iron would like a word. Neither of these options are a wrong answer though.
