My Nonna used to make these all the time and I tried and they taste pretty close to hers but couldn’t ever be as good as hers 😍

    The secret ingredient is usually a shitton of oil and more salt than you think.

    That’s always been what it takes to reproduce my grandma’s stuff.

    Her idea of “a bit of oil” is very different from mine 🙂

    What’s the filling for the rice balls?

    I’m not convinced she was very Italian if they were referred to as ‘rice balls’ lol. These look like arancini – typically made from leftover risotto.

    Nothing ever tastes as good as Grandma’s or Mom’s particularly after she’s gone. Salt, oil, rough measurements, sure, but more likely just a trick of memory.

    They look like supplì. They are from Rome, usually they have tomato sauce rice and a mozzarella heart that melts and gets stringy (they are called supplì al telefono because the melted cheese makes them look like an old school wired telephone). The original recipe has been turned into a lot of different variations, in Rome we see lots of cacio e pepe, carbonara and amatriciana versions, but you can stick anything in them. It’s a leftover rice dish

    God I love rice balls. So insanely labour intensive, so I don’t make them that often but when I do, lord lol. My favourite way to make them is with Parmesan in the rice, and an insane amount of a really buttery mozzarella in the centre with lots of *sugo* for dipping.
