I have bacon, onion, celery, green pepper, garlic, salt, and pepper, and thyme in my pot. What should I make?

    This is basically what my husband and I call ‘crack*’. We add it into absolutely everything! If we’re making a pasta dish, we’ll throw some in…..if we’re making breakfast we’ll throw some in……..if we’re making a cheese ball we’ll throw some in. It goes with everything.

    * we use jalapeño instead of green bell pepper, and no celery.

    Add broth, potatoes, leeks (wash first) and carrots and you will have really nice soup. Potatoes will have to be cooked for about 30 minutes before if you don’t want to have a stew. Cook it all together if you don’t care.

    Edit:

    You can chop up some sausages and cook them in there if there’s not enough meat. Maybe add a hint of nutmeg.

    That is crying out for some navy beans or limas or pintos. BEANS gets my vote.

    Add in green lentils/peas and red lentils. Then add stock and cook low for an hour so they are tender.

    You now have a tasty lentil, pea and bacon soup.

    I wouldn’t dilute that flavor in a soup. It would taste great on some bruschetta with tomatoes or an omelette

    Maybe throw in some ground beef or turkey and put it over rice. Rice bowl.

    Chicken Gumbo with Andouille Sausage (Simple Recipe)
    Prep Time: 20 minutes
    Cook Time: About 3 hours
    Serves: 10–12
    Ingredients
    Gumbo
    1/3 lb bacon, diced
    2–3 lbs chicken thighs (skin on)
    Salt, to taste
    1–2 lbs andouille sausage, sliced
    1/2 cup vegetable or peanut oil
    1 cup all-purpose flour
    1 large onion, diced
    2 green bell peppers, diced
    4 celery ribs, diced
    4 cloves garlic, minced
    2 tbsp tomato paste
    4 cups chicken stock
    4 cups water
    3 tbsp Cajun seasoning (more to taste)
    1/2–1 lb okra, sliced
    3 green onions, chopped
    1/2 cup fresh parsley, chopped
    Cajun Spice Mix (optional – or use store-bought)
    2 tbsp paprika
    1 tbsp garlic powder
    1 tbsp dried thyme
    1 tbsp dried oregano
    1 tsp black pepper
    1/2–1 tsp cayenne pepper
    1 tsp celery seed
    Instructions
    Cook the bacon
    In a large heavy pot, cook bacon over medium heat until crispy. Remove and set aside.
    Brown the chicken
    Place chicken thighs skin-side down in the bacon fat. Season lightly with salt. Cook 4–5 minutes per side until browned. Remove and set aside.
    Brown the sausage
    Brown the sausage slices in the same pot. Remove and set aside.
    Make the roux
    Add oil to the pot if needed to equal about 1/2 cup fat. Stir in flour. Cook over medium-low heat, stirring often, until the roux turns dark brown (coffee-colored). This takes about 25–30 minutes. Do not burn.
    Heat the stock
    In a separate pot, bring chicken stock and water to a boil.
    Add vegetables
    Stir onion, bell peppers, and celery into the roux. Cook 5 minutes. Add garlic and cook 2 more minutes. Stir in tomato paste.
    Add liquid and seasoning
    Slowly ladle in the hot stock, stirring constantly until smooth. Add Cajun seasoning and adjust to taste.
    Simmer with chicken
    Return chicken thighs to the pot. Lower heat and simmer gently for about 90 minutes, stirring occasionally.
    Add sausage, okra, and chicken meat
    Remove chicken, shred the meat, and discard bones. Return chicken meat to the pot. Add sausage and okra. Simmer at least 1 more hour (longer for thicker gumbo).
    Finish and serve
    Stir in green onions, parsley, and reserved bacon just before serving. Serve hot over rice or with crusty bread.
