I hate that I can't update an old post. Ugh.

So, after all the advice from my previous post about this, here is what I did and how it turned out.

I placed a cutting board beneath the pot. I placed a towl between the cutting board and the pot. I wrapped the pot with towels. I covered the top with plastic wrap and another towel.

It took nearly 1.5hours to heat this much water from 76F to 132F.

I removed the Tomahawk from its original wrapping, seasoned it with salt & pepper, added a few springs of fresh rosemary and resealed in my vacuum bag.

When I placed the steak in the water, I expected the temp to drop way more than it did. I had my Thermoworks RFX probes in the water. One on the bottom and one near the top. The InkBird was only off by .3F which was pretty surprising for an inexpensive SV. The meat only dropped the temp by 1F, I assume because of the large volume of water.

I SV the steak at 132F for 3 hours.

While I appreciate the cast iron sear, I much perfer the flavor of a steak cooked over coals and wood.

I dried the steak really REALLY well before cooking it.

I poured a whole chinmey of coals in my small 18" Weber. I used my 18" instead of my 22" because the steak+bone fit, and I could concentrate the heat in a smaller area, making it WAY hotter. Just before I put the steak on, I threw a pile of Mesquite wood chips on the coals. I usually have chunks, but was all out.

Once the flame was roaring, I quickly seared all sides of the steak. It was on the grill for maybe a total of 5 minutes.

It may not be everyone's cup of tea or cooked perfectly, but I am very happy with the results. It was delicious.

Thank you all for all the suggestions. Had I not come here, I 100% would have a cracked countertop because I would have never known NOT to cook with the pot directly in my granite, so, thank y'all for saving my marriage in that one haha.

    Unsolicited $.02 … when I need to do that volume of water (or really high temp…mashed potatoes) I use my stove to assist in raising the temp. Then the sv unit can maintain.
