Ingredients:
* 4 bone-in or boneless pork chops
* Salt and black pepper to taste
* 1 tablespoon olive oil
* 1 cup peach preserves or peach jam
* 1/2 cup diced peaches (fresh or canned, drained)
* 1/4 cup chicken broth
* 2 tablespoons brown sugar
* 1 tablespoon apple cider vinegar
* 1 teaspoon garlic powder
* 1/2 teaspoon paprika
* 1/2 teaspoon ground ginger (optional)
Instructions:
1. Season pork chops on both sides with salt and black pepper.
2. Heat olive oil in a skillet over medium-high heat and sear pork chops for 2–3 minutes per side until lightly browned.
3. Place pork chops into the slow cooker.
4. In a bowl, whisk peach preserves, diced peaches, chicken broth, brown sugar, vinegar, garlic powder, paprika, and ginger.
