
This time I used Greek yogurt as the base for a batch of icy fluff.
- 1/2 cup nonfat Greek yogurt
- 1/4 cup water
- 3/4 tsp guar gum
- 1/4 tsp stevia
- 1/4 tsp vanilla
- Hefty pinch of salt, more than you think you'd need
Mix it all and chill in the fridge til later. Put your bowl in the freezer ahead of time if you can
- Blend a tray full of ice cubes into snow
- At this point, I threw in an unmeasured amount of frozen peach chunks, probably around a half fruit's worth, mainly just to use up some of what's taking up space in my freezer
- Add the mix, stir manually to incorporate, and blend til it's looking fluffy
I got just over 3 cups' volume out of this batch, and I'm estimating it's at about 110 calories, and probably around 8-10g protein. I used homemade yogurt, so I don't have exact nutrition info on it.
