That looks delicious! Happy eating!
Hopefully you meant 6 quart, rather than 16. My 6 quart itself is way too big for just me and the parents (we freeze the extra in smaller portions, though, so it works really well). An actual 16 quart one would be … ginormous!
ETA: My very first intro to slow cookers was a friend who invited me to dinner – his wife had made a very similar beef stew in the slow cooker, and also fresh bread in their bread maker. It was so delicious! I can still remember the aromas just walking into their house on a winter evening!

I got a slow cooker for Xmas too. From my mil who already gifted us one last year. If I can I would like to trade mine in for a little air fryer 🤞
Anyway I use my slow cooker a lot. I recently made a peach dump cake and it turned out like a steamed type of cake, so good with ice cream. I usually use it to cook pork carnitas I buy usually on clearance and pre seasoned. I also like to cook a bunch of ground beef or chicken at once and portion it out for several meals. I really love making cabbage, onions and sausage also. My mil makes chilli which is super versatile. Oh, I’ve also used the slow cooker to make barbacoa using beef cheek meat. Good luck with yours, looks great so far.

I love using my slow cooker to make enough servings to eat one fresh meal and freeze the rest!

Beef stew in a slow cooker. Gotta be done! ✅

You should know that you don’t have to fill the entire slow cooker. You generally want it to be at least half full though.

Portion it out into individual serves in freezer safe containers. Give them an hour or so to cool. Label & date, then freeze until required. Slow cooked stew tastes great when stored and reheated.
