  1. Spanakopita Triangles

    Ingredients:
    – 16oz spinach leaves
    – 1 small onion, chopped
    – 1/2 cup green onion, chopped
    – 1/4 cup fresh or dried parsley
    – 2 tbsp dill, optional
    – 8 oz feta cheese, crumbled
    – 1/2 cup grated Parmesan cheese, optional
    – 2 eggs, lightly beaten
    – 1/2 tsp salt
    – 1/4 tsp ground black pepper
    – 1lb phyllo dough, about 20-25 sheets

    Brush:
    – 1/2 cup unsalted butter, melted
    – 1/2 cup olive oil

    Bake at 375 F for 20-25 minutes

    Makes 20-25 pies
