I’ve had it before but it looked nothing like that and it was Coca Cola chicken not Diet Coke. I was sus about it at first, but it was really good. When I had it, the sauce was thicker and chicken was seasoned and seared before going into the sauce.

Ham in cola is a pretty well known thing I guess, I wouldn’t think to use chicken instead (or add ketchup) but why not

Coke + ketchup + a few other seasonings (reduced down) turns into a barbecue sauce type glaze. Phosphoric acid is also a common meat tenderizer, so there is intent to tenderize the chicken a bit as well.
Not sure how different it would be with diet coke but you’re basically just missing out on the sugar [that is in regular coke] (which most barbecue sauces do have sugar).
I wouldn’t consider this stupid. Should have reduced that sauce WAY down so it turns into a glaze and that would have went better with the rice (rice looks dry and bland as fuck, but stupid, not sure I’d go that far).
Decent idea, execution could be better. Stupid? I would say no.
Edit: Geez people. Yes, ketchup has sugar. But diet coke + ketchup would have less sugar in the recipe than coke + ketchup. So swapping out coke with diet coke is still a way to reduce the sugar in the recipe. I didn’t say that doing so would remove ALL sugar in the recipe, just remove the sugar from the coke. My goodness people can be so narrow-minded sometimes.

Not this one but I have Heard of coke/dr pepper being used in recipes from time to Time.
Never tried it myself but sweet flavours often can go well with meat. Though I feel like it would have been better marinated then pan seared, rather than boiled In coke

She used Diet Coke… so it’s a bit stupid, but full fat coke to slow cook food is a normal thing

I think if you used regular cola instead of diet and added the pineapple to the sauce, this would be legit.

I can’t say anything bad here lol dammit she seems like too nice of a nice person…so to answer the title question, no…it sounds awful lol but I do love chicken and Diet Coke separately, so maybe it’s ok?

Not stupid. I think this probably tastes alright, like ok home cooked food. It’s got veg, washed rice in a rice cooker, she’s thought about flavours (not a lot, but she’s adding ketchup for acidity).
The problem with the Internet is we can see and comment on everyone’s lives, even when regular people have been cooking like this for ages. This sub to me is for pretentious, arrogant, expensive food, trying to be something it’s not. Not home cooks trying to make food for their family. Post feels like either engagement farming or mean, I’m not sure which.

This isn’t stupid, just poorly executed for some of the ingredients. But if those of you that think this is stupid, you would hate a popular FB person that makes many meals in a similar fashion to this. I feel sorry for those of you that think using what you have in the home and genuinely trying to make a good meal your family will eat is a bad thing.

i legit feel bad for this woman, she actually try different recipes, she listen to comments and can/have cook normal food but her brain is still wired in the ”classic american cuisine”

First of all, not even gonna bother with a joke about the eye patch, you guys’ve got this.
To the point: Using pop (soda, whatever) in a marinade or sauce for meat is not stupid. My husband does this with root beer. However, the whole point is the sugar content. Making a *diet* Coke sauce…is indeed very stupid, as you’ve eliminated what makes it do what it’s supposed to do, which is soften the meat and also thicken/caramelize.

as in: She’s not eating this because she is a terrible cook.
She’s a terrible cook because she can’t afford normal food, or was raised on this.
It’s like the people who prefer ‘Stale Bread’ – that’s what they grew up on, it’s what they HAD to grow up on.
This is Diet Coke, Ketchup, Rice, Peas and Chicken… I’m guessing the Pineapple may have been added later on if she got more money but that is a side, and a Pineapple isn’t terribly hard to find/buy.
