Date Syrup, also known as Date Molasses, is a sweet and thick syrup commonly found in Middle Eastern and Greek cuisine and a little goes a long way in cooking. It pairs beautifully with tahini, giving it an extra depth of sweet flavour that tastes divine when tossed with cauliflower redolent with tart sumac. The almonds give it some crunch and the parsley adds a herby freshness to the dish. In the future, I think I will blanch the cauliflower florets for 3 minutes, then cool it down in an ice bath before patting them completely dry with paper towels, coating them in the sumac oil mix and char-grilling them. They will hold their shape better, making it easier to toss in the delicious tahini date syrup glaze. Overall, this was the most talked about dish of the evening!
