Cowboy caviar is the ultimate 15-minute party appetizer that everyone can’t get enough of. It’s loaded with beans, chopped veggies, and a bright, tangy dressing that ties it all together.

I have plenty of must-make appetizers for big parties like the 4th of July or Super Bowl, but cowboy caviar is always requested by friends and family. It’s like a cross between some of my favorites: pico de gallo, three-bean salad (from my Healthy Meal Prep cookbook), and guacamole. So you can imagine all the delicious Southwest flavors and textures happening in this dish!

  1. I have an upcoming recipe for Chipotle chicken (just like the grilled chicken you get at Chipotle restaurant!) and I topped it on some leftovers of this cowboy caviar.   2. This looks wonderful! One question, I am not a fan of cilantro at all. I have tried hard. Would you suggest swapping Italian parsley or simply leave out an herb all together?

  4. The bigger jalapeno peppers tend to be less hot than the smaller ones. When you remove the seeds and membranes you get rid of most of the heat. The small ones aren't very hot if you prefer something hotter try a serrano pepper. I buy the big ones all the time and they're not hot at all to me but everybody's taste is different and there's variations among the jalapenos so every now and then you might find a big one that is hot

  6. I made this for a backyard get-together last weekend and it disappeared in minutes! So fresh, so crunchy, and that tangy dressing just brings everything to life. Next time I’m throwing in some diced mango — has anyone tried that combo yet?

  7. That's yummy! Healthy party dip or a salad full of rich vibrant colours for summer. Although, for me I won't be adding corn (bad allergy) I'll substitute with yellow bell peppers. 😋

  8. Love it! I learned to dump in a bottle of Zesty Italian Dressing. Not any more. Gonna use the fresh Dressing ingredients. Or maybe zap up in my blender Avocado Lime dressing.
