Ristorante invites guests to an immersive evening with Emeritus Vineyards and winemaker Keith Hammond. Taking place on Wednesday, January 21, 2026, at 6:30 p.m., this special wine dinner will feature a curated selection of Emeritus wines from Sonoma, paired with a refined Italian menu.
The evening will begin with a clam oreganata, a refined Italian coastal dish, paired with 2021 Emeritus, Blanc de Noirs, “Halberg Brut.” After guests enjoy this custom dish, the second course features pan-seared scallops with a pea puree and citrus butter, perfectly paired with the 2024 Emeritus Pinot Noir Blanc, “Halberg Ranch,” to highlight the scallops’ delicate texture and the dish’s overall vibrancy.
When the third course begins, the 2021 Emeritus Pinot Noir, “Pinot Hill,” will be paired with robust pappardelle, showcasing the distinct character of royal trumpets and chanterelles. Following this rich and elegant dish, guests will be treated to a pan-seared duck breast with roasted Brussels sprouts, parsnip purée, and cherry reduction, paired with the 2021 Emeritus Pinot Noir “Halberg Ranch” as the fourth course.
As the evening comes to a close, guests will enjoy a sweet ending with a cherry turnover and vanilla bean gelato. This pairs well with coffee, espresso, or tea. The full menu is available at angelinasofbonitasprings.com/wine-dinners.
