

This is a salad that I have been making for several years, and I will keep making it until the day I die… or I cannot find lettuce and berries 😊. It is usually my go-to summer salad, but, in the dead of winter, I found some nice strawberries and blueberries, so I made it for dinner tonight.
I feel like this salad is like the definition of the mediterranean diet. It has: Protein, Carbs, Healthy fats, loads of fruits, & vegetables, as well as nuts if you want to add. If you are familiar with Earl’s restaurant and have ever had or know of their West Coast Prawn Salad (probably 15+ years since they have had it on the menu), this is my take on it.
The recipe is quite long with bullets and stuff so I’m gonna add it as a comment in case anyone is interested

1. Base is a bed of Spring Mix
2. Top that with sliced up strawberries, blueberries, blackberries, (raspberries), and cherry tomatoes (tomatoes are option, but I had some sweet strawberry tomatoes from Costco that I thought would go good in this)
3. Add cooked grains – Quinoa alone is great on this, today I did ~ ¼ cup of (cooked) Farro, Quinoa and Wild Rice mix
4. Add cheese of choice – a nice creamy cheese (like Goat) is best, but I have feta to use up so used that instead
5. Add protein of choice (Chicken or Shrimp recommended): most of the time I use Shrimp on this, scallops aren’t a bad choice either. I tossed some Argentine Red Shrimp in spices (whatever you like, but I like to use something sweet and used a bbq honey spice mix) & sautéed then steamed that so they were nice and plump
6. Add avocado
7. Nuts like slivered almonds are good on this, as well as some dried fruit, but as I type this I realized I forgot to add them
8. Dressing that I added after all the above was put into the bowl was a mix of smashed Raspberries (this is why I put Raspberries in brackets above, because I add them to my dressing), yogurt and balsamic vinegar. Thinned out with a little water so it was looser and easier to put on (could add oil too but I feel like it’s not needed)
9. Drizzled some Nonna’s Strawberry Fig Balsamic on top
