Trying to find more ways to use imitation crab — made this Chow Mei Fun

I know imitation crab isn’t everyone’s cup of tea, but personally love it and have been looking for more ways to incorporate it into recipes.
I’ve been testing it in various stir fry recipes and I think this Chow Mei Fun lends itself really well to the IC. The tender meat matches nicely with the tender noodles, which are balanced by the crunchy veggies. The mild crab flavor is enhanced, but not overpowered by, the soy-garlic stir fry sauce.
