Blackstone Buffalo Chicken Wraps
Makes 4
2lb boneless skinless chicken breast, diced small
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt & pepper, to taste
1 cup Buffalo sauce
½ cup plain Greek yogurt
1 cup shredded mozzarella cheese
4 green onions, chopped
4 large flour tortillas or high-protein wraps
Add-Ins:
Shredded lettuce
Blue Cheese Crumbles
Preheat Blackstone to medium-high heat. Add oil, then chicken. Season with garlic powder, onion powder, paprika, salt & pepper.
Cook 6–8 minutes, spreading chicken out so it gets golden and crispy. Lower heat slightly, add buffalo sauce, toss to coat. Place buffalo chicken in a bowl and mix with greek yogurt, shredded cheese, and chopped green onions. (You can also just do this directly on the griddle).
Assemble wraps: add buffalo chicken mixture, shredded lettuce, and blue cheese crumbles.
Fold into wraps, spray griddle with avocado oil spray and press seam-side down for 2-3 minutes, flip over to grill other side of wrap and cook another 2-3 minutes until golden brown and heated all the way through.
