That dessert takes me back to my childhood. My late Grandmother would make us rice pudding. She made a brown sugar butter sauce to go with it. And she had raisins in it too. Being a Kentuckian, I like a bourbon sauce on my rice pudding too.

Ugh! Baby food. Fine if you don't have teeth.Want something a bit different? Make your rice pudding with Patna rice, full fat coconut milk, cardamom seeds, star anise, saffron, jaggery and cinnamon sticks.
Ok, so Chef Pepin is using up leftovers but, frankly, you may as well open a can of supermarket rice pudding and add flavourings of choice.
Reusing everything is so old school.
The older generations wasted nothing.

Going to make this for my wife this weekend!
I don't see where he "doubled again". He said usually it is 2 to 1, two cups liquid to one cup rice. Then for rice pudding he doubles it again. Then he just puts in 3 cups milke to 1 1/2 cups rice. That's double, like the usual 2 to 1.

I love rice pudding warm and cold – it just depends on the day. My mom made an amazing baked rice pudding. She added eggs to it so it would set when baking – kind of like a bread pudding. Thinking of this makes me miss my mom. She made wonderful potato soup, too. ❤
It never occurred to me before that there was such a thing, but I am now desperate to visit the Chinese restaurant Chef Pepin orders take-away from.
