

I'm loaded up with cooking this week. This was in fact from an online recipe, but I really hadn't done this before so I definitely needed guidance. Marie Callender's doesn't make a vegan pot pie in itself. But for some reason their pre-made crusts don't have eggs or milk. I didn't want to be cooking all night and I love the crusts. The MCs pies were a favorite before I went vegan. The crusts come in two and so I let one sit out for a bit and cut the edges of the tin off and flipped it onto a flour cutting board for the top. The only thing I would say is that I should have cut the potatoes smaller and I added pepper because the recipe had none. I know it's vegan junk food and I plan to diversify the pot pie method and learn to make good dough. But I am so proud I didn't screw it up entirely.

We made one tonight, too, but we are also GF so I use a drop biscuit recipe for the crust.
