Aside from the textured looking white stuff, the salmon also looks very… fatty? Way more than usual. I've ordered from this place hundreds of times and this order has never looked like this before.

You have salmon belly, which is very fatty. The silvery mottled layer is an under skin layer and perfectly edible, with some people preferring pieces with that visible. It only really shows up like this on belly cuts. The white streaks in the flesh itself is fat.

Sushi chef here. The white you see is a layer of silverskin between the skin and the flesh. If a sushi chef is able to keep it intact while removing the skin, it means they are very skilled. This chef did a medium good job
