Cut against the grain !!! Treat it like skirt. Don’t cook above medium it has huge fibers.

We love flap meat! We get it from Costco a lot, it’s delicious but cooks quickly. The texture when grilling can be misleading so I would recommend pulling it off before it feels ready.
Great stuff! I like to marinade with a Japanese style marinade (Mr. Yoshida), ginger, garlic, and a little bit of beer, then hit the grill. Delicious!

Beef flap, known in New England as beef tips is one my top three cuts of beef. It lends itself to being marinated and grilled. I wish I could find that in Florida.

Probably good for tacos. I like to go to the Mexican grocery stores and get skirt or flank steak. Most carnicerías have it there already pre-marinated. But this looks a lot thicker, looks great, I’m sure it’s good just by itself, marinated or not.

Man, so many options with this. Korean marinade and slow cook for Koran tacos with pickles onions. Marinade in SPG+comino half orange 1 lime, high sear and make some killer street tacos with onions and cilantro. Grilled with garlic butter and Brussel sprouts. Smoked beef tips over mashed with roasted broccoli.

These are bavette steaks cut from sirloin flap. Known I’m Brazil as fraldinha. Very good. Probably my favorite cut in Australian Wagyu, but not so much as USDA choice.

This is my absolute favorite cut of beef for making fajitas, tacos, or any recipe that requires small pieces of meat. The mouthfeel and chew on this is fantastic! So much flavor and great texture! Costco has it daily too. I buy 5lb every 2 weeks.
