Made banh mi for the first time and it was amazing! I did a mix of chicken thighs and breasts in chopped garlic, lemongrass, fresh ground pepper, and a couple table spoons of homemade banh mi sauce. Air fried them and then chopped them up with a half head of cilantro. Layered the Baguette with banh mi sauce, Sriracha mayo, chicken, homemade pickled radish and carrots, cucumber and jalapeños. It was super fresh and the flavours really complimented each other!

    I know this isn’t traditional, I don’t really like pork so decided to do chicken. But still tasted amazing!

    Yum. I think the combo of chicken parts is good, but for somethign like this, perhaps go with just the thigh meat!
