Never grill your bread on the griddle or Friday in the pan. It leaves the nastiest taste like burnt Grease in your mouth when you eat it. This is fact! Big mistake there especially English muffins. Always toast then spread butter on top if you want LOL. This is my only complaint LOL
When I first started working in kitchens, one of the first things I was taught (by an apprentice) was how to make Eggs Benedict. They called it that, but I found out later that it was Eggs Florentine, baby spinach leaves were placed under the egg. The chef had made a vinegar reduction the night before and that replaced the lemon juice. There was no food processor, I used the biggest whisk I'd ever seen in a huge steel bowl. Melted the butter in the microwave and beat that mixture till my arms fell off, lol. All this work in a large cafe with the tiniest kitchen was my first introduction to industrial kitchens. Turned out I was not cut out for speed in the kitchen and that was the sad end of my hospitality career
