Ingredients
Chicken & Veggies:
Chopped chicken tenderloin β 500β600 g
Olive oil β 3β4 tbsp
Butter β 2 tbsp
Salt β 1 tsp
Black pepper β 1 tbsp
Red chili flakes β 1 tsp
Dried parsley β 2β3 tbsp
Broccoli (blanched) β 1 cup
Sweet corn β Β½ cup
Capsicum (chopped) β 1
Pasta (uncooked, spiral or penne) β 1Β½ cups
Sauce:
Milk β 1 cup
Heavy cream β 1 cup
Chicken broth β 1Β½ cups
Garlic powder β 1 tsp
Onion powder β 1 tsp
Salt β 1 tsp
Black pepper β 1 tsp
Italian herbs β Β½ tsp
Chili sauce (or hot sauce) β 1 tbsp
Topping:
Shredded cheese (mozzarella/cheddar) β 1Β½ cups
Method
Cook the Chicken:
Heat 1 tbsp butter and 1 tbsp olive oil in a pan. Add 500β600 g chopped chicken tenderloin, season with salt, pepper, red chili flakes, and parsley, and cook until chicken turns white and juicy. Set aside.
Assemble the Casserole:
In a 9×13-inch baking dish, add blanched broccoli (1 cup), Β½ cup sweet corn, 1 chopped capsicum, and 1Β½ cups uncooked pasta. Add cooked chicken and mix well.
Prepare the Sauce:
In the same pan, whisk together 1 cup milk, 1 cup heavy cream, and 1Β½ cups chicken broth (no heating required). Add garlic powder, onion powder, salt, pepper, Italian herbs, and chili sauce.
Pour & Layer:
Pour the sauce evenly over the casserole mixture. Mix lightly, then sprinkle 1Β½ cups shredded cheese on top.
Bake:
Cover the dish with foil and bake at 380Β°F (190Β°C) for 20 minutes. Remove foil and bake another 20 minutes uncovered, until the top turns golden and bubbly.
Optional: broil for a few minutes for a crisp, cheesy crust.
Serve:
Let it cool slightly (if you can wait), then dive in! Perfectly creamy, cheesy, and irresistible.
