Vegan gluten free vanilla cake with strawberry filling and frosting

I don’t usually make layer cakes like this but wanted to do something special for my newly pregnant gf bestie. Twas quite the project!

And that’s chopped up pistachios on the sides. The cake relies on almond flour and had a strong almond flour flavor, which I didn’t love, but it was nice to work with.
