    Cheesy Mushroom Potato Roll

    ​Servings: 2–4

    ​Ingredients

    ​The Dough

    • ​600g floury potatoes (cooked & mashed)

    • ​1 large egg (or 2 small)

    • ​40g cornstarch

    • ​Salt and nutmeg to taste

    ​The Filling

    • ​300g brown mushrooms, diced

    • ​1 shallot, finely diced

    • ​1 clove garlic, chopped

    • ​2g dried thyme

    • ​1 tbsp crème fraîche

    • ​Butter, salt, and pepper

    ​The Sides & Toppings

    • ​120g mixed cheese (Gouda & mozzarella)

    • ​Lamb’s lettuce

    • ​Pomegranate seeds

    ​Dressing:

    • Olive oil, salt, and pepper

    • ​Cranberry jam (for serving)

    ​Preparation

    ​Prep the Dough:

    1. Knead your lukewarm mashed potatoes with the egg, cornstarch, salt, and nutmeg until you’ve got a smooth dough.

    ​Make the Filling:

    1. Get a pan ripping hot and sauté those mushrooms. Toss in the butter, shallots, and thyme for a quick sauté.
    2. Stir in the garlic right at the end, then fold in the crème fraîche.

    ​First Bake:

    1. Line a baking sheet with parchment paper.
    2. Sprinkle half of your cheese directly onto the paper, then press the potato dough flat over the top of the cheese.
    3. Pop it in the oven at 180°C (350°F) for 20 minutes.

    ​The Roll-Up:

    1. Spread your mushroom mix, some pomegranate seeds, and a bit more cheese over the baked dough.
    2. Roll it up tight, making sure the seam is facing down.

    ​Final Bake:

    1. Top the roll with the rest of your cheese and bake for another 10 minutes at 180°C (350°F).

    Tip:

    Hit it with the broiler for a minute at the end if you want a crispy, golden crust.

    ​Serve:

    1. Let the roll chill for about 10 minutes so it sets. While you wait, toss your salad with the oil, salt, pepper, and pomegranate seeds.
    2. Serve slices of the roll with the salad and a side of cranberry jam.

    This sounds delicious. Lambs lettuce ( probably something else here in the USA), is the only thing I’m not sure about. As far as ingredients it sounds good.
