Japanese risotto inspired by that guy who posted his menu


I saw a few days ago someone posted a photo of their menu for their restaurant and saw Kansai risotto and thought "damn that looks dope" so i did it.

    Dashi, red snapper with a miso beurre blanc, teriyaki mushrooms and fried shallots.

    Im red-green colorblind so I thought the plate looked great until multiple people pointed out its like all brown and Grey lol. Im considering adding a yuzu gastrique, changing up the plate, thickening the risotto and adding a colorful vegetable like bok choy.

    I was watching some master chef and one of the chefs did a miso risotto, it was the pumpkin episode. You dish looks good but it’s a little yonic. I bet it tastes great
