Brined these in pickle juice over night, then seasoned with this Carolina style rub and let sit until smoking. Cooked to about 150 internal then fried in ripping hot oil for a 1:30 mins. Turned out great.

    Final product looks great! Letting them sit in pickle juice is great for breaking down the fibers, resulting in super tender chicken. Those look super crispy, I’d definitely eat those! 🔥
